Lipids
are organic compounds composed mainly of carbon, hydrogen, and oxygen, but they
also may contain other elements, such as phosphorus and nitrogen. Lipids
usually have more than twice as many hydrogen atoms as oxygen atoms. They are
insoluble in water, but can be dissolved in certain organic solvents such as
ether, alcohol, and chloroform. Lipids include fats, oils, phospholipids,
steroids, and prostaglandins.
